So no fluff here! I am not going to give you the long drawn out story about how I came to love this recipe or talk endlessly about each loving ingredient! Here it is in the flesh!
Pre-heat oven to 350 degrees, grease a 12 muffin tin pan (I used coconut oil)
Dry Ingredients:
3c old fashioned rolled oats
1 tsp of cinnamon
2 tsp baking powder
nutmeg (to taste) its a stronger spice go with what you know!
1/2 tsp salt
mix together
Wet Ingredients:
In a seperate bowl combine together the following:
1c mashed banana (preferably extra ripe)
2 eggs
1.5 cups of almond milk (unsweetened)
mix ingredients very well together.
Now, combine the wet into the dry! mix very well together.
In my variation I added dairy free chocolate chips, and crushed cashews. You can add what you like! Maybe dried fruit or other types of nuts….I also did not add any additional sugars other then the chocolate chips and just the very ripe banana. If you want the muffins sweeter add some coconut sugar or other substitute.
Bake 20-25 minutes, keep an eye on it, set the timer for 20 minutes and check them out and decide whether you need an extra few minutes! Don’t turn this into a baking disaster!! (LOL) ENJOY!!
